Here are the results of my tests of various Steam games over the past 5 days.
If a game just says "Great", that means it runs perfectly out of the box, with no need to lower settings to improve the frame rate, fiddle with non-controller config tools, or change Proton versions, and no glitches that I noticed. I also note when games have config tools or launchers that require mouse control (you can use the touchscreen to interact with them). Significant issues are colored red. Games that require you to change the Proton version have blue notes.

Alan Wake: Very Good, 60 FPS with drops to 50 in certain areas on medium settings
Alien Isolation: Great, 60 FPS with high settings. Title screen/pause menu fonts are on the small side
Binary Domain: .NET Framework tries to install every time on startup and fails with an error message, but you can dismiss it, and it still works great once in game. Run the config tool first (requires mouse control)
Blasphemous: Great
Bloodstained: Ritual of the Night: Great
Brothers: Great, run the Launcher the first time you play to set the resolution
Carto: Great
Castle of Illusion Starring Mickey Mouse: Great after some initial stuttering (shader compilation?)
Castlevania Lords of Shadow: Great, even though it's listed as incompatible. 60 FPS at max settings
Cook, Serve, Delicious 3: Very Good, some small fonts/UI elements
Crash Bandicoot N. Sane Trilogy: Great, 60 FPS at high settings
Crazy Taxi: Very Good, has low quality texture filtering. It would be nice to have a video driver control panel where you could force AA/AF/etc.
Dark Souls 2: Scholar of the First Sin: Great, 60 FPS at high settings
Dark Souls 3: Very Good, ~45 FPS at medium settings, can't really reach 60 even with low settings, has some small UI elements
Defender's Quest: Runs fine, controller support doesn't feel Great (works better with mouse)
Defense Grid 2: Small UI, VSync wasn't working (wasting battery running at )
Disco Elysium: Great, 60 FPS at high settings
Dishonored: Great, 60 FPS at high settings
Dungeon Defenders: Great, 60 FPS with some initial stuttering
Elden Ring: Good, around 40 FPS at medium settings, Small UI elements
Enslaved: Great, 60 FPS, some FPS drops during explosions
Escape Goat 2: Great
Eversion: Great
Evoland 2: Great
The Fall: Great
Fallout 4: Very Good, 60 FPS at medium settings with drops to 50 in a crowded city. Launcher is mouse only
Final Fantasy VI: Great, there's just a long initial load. The font replacement trick works fine
Final Fantasy X: Crashed the first time I launched it, but worked the next time. Has bad frame pacing (I had this problem on my PC as well)
Freedom Planet: Doesn't detect the controller at all
Gris: Great, froze when exiting the first time, but was fine the second time
Half Minute Hero: Broken with default settings, but Great with Proton 5.0-10
Half Minute Hero 2nd Coming: Great
Half Life 2: Great
Hamilton's Great Adventure: Great
Hell Yeah! Wrath of the Dead Rabbit: Audio glitches, extremely long loading screen
Katana Zero: Great
Kaze and the Wild Masks: Great
King's Quest (2015): Great
Lara Croft and the Guardian of Light: Poor performance with default settings, but Great with Proton Experimental (has a Setup tool with mouse control only)
Legend of Grimrock 2: Great, but no official controller support. Didn't like the selected control profile, would need to set up my own
Legend of Heroes: Trails in the Sky SC: Great, except the intro video doesn't work. Run the config screen first (requires mouse control). I haven't beaten it yet, are there any other FMV cutscenes besides the intro?
Legend of Heroes: Trails of Cold Steel: Great, and the intro video works. Run the config tool first (requires mouse control, called "Controller Layout Tool"). Choose Unlimited for the FPS cap (the game's 60 FPS cap has bad frame pacing)
Guardians of the Galaxy: The Telltale Series: Great, some initial stuttering (shader compilation?)
Metal Gear Solid V Ground Zeroes: Great, 60 FPS at high settings
Mini Metro: Very Good, no controller support, but works well with the touchscreen
Mini Motorways: Great
Mortal Kombat 9: Great, 60 FPS at max settings
MouseCraft: Technically playable - UI shows mouse/keyboard prompts even after choosing gamepad in launcher
Offspring Fling: Surprisingly poor performance for a 2D game (40-50 FPS), no controller support (have to map keyboard/mouse to buttons)
Orcs Must Die: Great, 60 FPS at max settings and 8xAA. Set resolution to 720p, since part of the screen seems to get cut off at 800p
Orcs Must Die 2: Great, 60 FPS at max settings and 8xAA. Menus feel designed primarily for mouse control, but they do have controller support (move the cursor with the left stick)
Orcs Must Die 3: Good, 60 FPS at low settings (AA medium). It's near the power limit even at the beginning of a level, so it'll start dropping as it gets more intense
Outland: No sound with default settings. The sound works with Proton Experimental, but then the title screen is missing its background, so there might be other glitches
Owlboy: Great
Pac-man Championship DX+: Great
Persona 4 Golden: No sound in the intro video with default settings, but works great with Proton Experimental. Runs at an easy 60 FPS even with 200% render scale
Phantom Brave: Has graphical glitches during battle
Pixeljunk Monsters 2: Great, runs at 60 FPS
Portal 2: Great
Quantum Conundrum: Great
Recettear: No sound
Resident Evil 2: Very Good, 60 FPS at medium settings, UI is a little small. Might want to drop the render scale down a bit to prevent FPS drops in demanding scenes
Return of the Obra Dinn: Great, 60 FPS
Rochard: No sound with default settings, works with Proton Experimental. Feels very stuttery even though the frame time graph looks smooth
Rogue Legacy: Very Good, graphics looks a little stretched at 1280x800, and it won't let me change to 720p
Rogue Legacy 2: Great
Roki: Great
Runner 3: Very Good, bottom right of loading screen looks glitched, and there's a small bar obscuring part of the main menu at the bottom of the screen
Sleeping Dogs: Good, 60 FPS at medium settings, but has a very small UI, and even smaller subtitles
Slime Rancher: Good, 60 FPS at medium settings, but is very demanding on the battery. Steam defaulted to a mouse profile, but it does have controller support
Sonic All-Stars Racing Transformed: Great
Sonic Adventure 2: Great, run the config tool first (mouse control)
Sonic Generations: Initially seems great, but I experienced terrible FPS drops as I picked up speed, sometime all the way down to 20 FPS
Spyro Trilogy: Great, 60 FPS with a mix of low and medium settings. Very demanding, low battery life
Stellaris: Seems like it could play well with virtual mouse control, but there's an odd persistent stutter while zoomed in on a solar system
Super Monkey Ball Banana Mania: Very good, 60 FPS at high settings, but the controller button prompts on the menus are invisible
Super Meat Boy: Great
Tales of Berseria: Good, runs at 60 FPS, but has terrible frame pacing
Timespinner: Great
Tokyo Xanadu ex+: Great, except the intro video doesn't work. Same situation as Trails in the Sky SC; does it have any FMVs after the intro?
Trine 4: Great, 60 FPS with Temporal AA on and 70% render scale
Tropico 5: Great, 60 FPS at high settings (at least with a small town), some initial stuttering
Unavowed: Great, works well with right stick as mouse and R2 as left click (it's a point and click adventure game). You have to manually bring up the keyboard (Steam Button + X) to enter a character name
Valkyrie Chronicles: Great, but looks kind of blurry. Run the config tool first (it has controller support)
Void Bastards: Great, 60 FPS at max settings. The text is pretty small in the comic-style cutscenes, but the UI is fine
War for the Overworld: Runs well, but there's no controller support, and the UI is very small
Wargroove: Great, even though it's listed as incompatible. Note that the view is super zoomed in when Full Screen is selected; changing it to 720p lets you see a lot more of the battlefield
The Witness: Great, 60 FPS at high settings. There's a mouse control config menu that pops up every time you start the game; just tap OK the button with touchscreen to get past it
Xanadu Next: Playable, and the intro video works. Run the config tool first - it's called the "Controller Layout Tool", and uses mouse control. The name is misleading, as you set the video settings there as well. Unfortunately, the config tool is partially cut off, making it hard to change some settings, but I didn't need to change any of the cut off ones. Crashed the first time I launched it, but worked fine the 2nd time.
Yooka-Laylee: Great, 60 FPS at max settings

You Must Build a Boat: Very Good, no controller support, but works well with the touchscreen
Ys I & II Chronicles: Great, the intro video works, but run the config first ("Controller Layout Tool", uses mouse control). Choose the "Chronicles" Display Mode for widescreen display, the "Complete" option will be 4:3 with a big border and a small game window. Choose "Point" for texture filtering, unless you want blurred pixel art
Ys Oath in Felghana: Great, intro video works, but run the config first ("Controller Layout Tool", uses mouse control).
Ys Origin: Playable, videos are just a black screen with sound playing, but gameplay is fine. Run the config tool first ("Controller Layout Tool", uses mouse control)
Ys Memories of Celceta: Config tool ("Controller Layout Tool", uses mouse control) is non-interactable, preventing the settings from being changed. There's a visible seam across the screen near your character when in shadows
